Cinnamon Streusel Muffins

It has been a very strange Spring this year – A world wide confinement has been imposed on us all due to a dangerous outbreak of an unknown disease, throwing everyone into a state of anxious shock – yet, as the strain of these extreme circumstances takes hold of us, a glimmer of hope shines brightly nearby, and as the French so eloquently say : “Après la pluie vient le beau temps” –  the english translation of this expression being: “After the rain comes the sunshine” …

After all, it is springtime – And spring is the most magical time of year… succeeding winter and it’s grey dullness, preceding summer with it’s images of blue skies and sunny beaches, springtime is natures’ way of showing us that there is hope – With this season, come the ideas of renewal, rejuvenation and rebirth, as baby birds chirrup happily away in their nests, colourful flowers dance airily in the wind and the sun comes out to shine once more…

So fling open your kitchen window, breath in that sweet, warm air and start baking again, for Spring has finally come and it is time to create more magical recipes…

These Cinnamon Streusel muffins are the most delicious muffins I have ever tasted! With their sweet, crunchy tops and their moist, cinnamony interiors they will put a smile on your face that will last a life time – Easy to make and using few ingredients, they will delight your family and friends at any time of the day. So bake away, for it is time to celebrate the arrival of a new season, one of hope and many things to come..

Ingredients

  • 256g flour
  • 3 teaspoons baking powder
  • A pinch of salt
  • 50g caster sugar (or 55g brown sugar)
  • 50g melted butter
  • 1 large egg
  • 250ml of milk

Topping / Filling

  • 50g caster sugar (or 55g brown sugar)
  • 3 teaspoons ground cinnamon
  • 60g melted butter
  • A few drops of natural vanilla essence (or 1 teaspoon of powdered vanilla)

Glaze

  • 100g icing sugar
  • A few drops of water
  • A few drops of natural vanilla essence (or 1 teaspoon of powdered vanilla)

fun fact:  Eating a teaspoon of cinnamon sprinkled over a bowl of cereal or mixed into a yogurt everyday helps reduce heart failure and weight gain.

Preheat the oven to 200°C (or 400°F). Grease or line a 12 cup muffin tin.

In a large bowl, sift the flour, baking powder, salt and sugar. Mix until well combined. In a second bowl, whisk the egg and the milk. Melt the butter on a low heat and pour into the egg mixture. Once the egg mixture is well combined add it to the flour mixture and stir until the batter is smooth and lump free, then set aside for later.

In another bowl, combine the sugar, cinnamon and vanilla essence. Melt the butter on a low heat then add it to the ingredients. Mix well then pour half of the cinnamon filling into the muffin batter, while making large swirl like movements. Do not mix in completely, so as to have a lovely swirl like pattern in the batter.

Spoon the muffin batter into each muffin cup, filling it 3/4 full. Add a teaspoon full of the cinnamon topping, onto each muffin top. Bake for approximately 15-20 minutes or until the tip of a knife comes out clean. Leave to cool for 10 minutes before transferring each muffin to a wire rack.

Whisk the icing sugar, natural vanilla extract and drops of water until the combination becomes a semi-thick glaze. Drizzle the glaze on top of each muffin.

Enjoy these muffins at breakfast with a large cappuccino, at brunch along side a freshly squeezed orange juice or for afternoon tea with a velvety flavoured coffee, and let the smell and taste of the cinnamon wash over you like a cool salty sea breeze…
